Fast, Easy, and Delicious: Fabio’s 30-Minute Italian by Fabio Viviani

Just discovered this article I wrote years ago about Fabio Viviani and Fabio’s 30-Minute Italian (St. Martin’s Press), which was new at the time, on the website “We the Italians.”

A recurring guest on national television shows such as Good Morning America, The Rachael Ray Show, and numerous Food Network Shows, such as Cutthroat Kitchen: All-Star Tournament, which he won, off-screen Fabio is a regular headliner at global food events, and he has authored four successful cookbooks: Café Firenze Cookbook, New York Times Best-Seller Fabio’s Italian Kitchen, and Fabio’s American Home Kitchen.

Fabio’s online presence draws millions of viewers yearly with his own cooking show, Fabio’s Kitchen, now in Season 5.

He also has numerous restaurants throughout the United States.

Salted Caramel Chocolate Cake

“If hot fudge wanted to be a cake, this would be it,” writes Fabio in the introduction to this recipe which is both sinfully delicious and sinfully easy to make. “Yes, it’s a classic sponge cake, but a clas­sic that is rich and chocolaty with hints of cinnamon, rum and espresso that bring home the indulgent chocolaty-ness of it all. I sometimes call this Butterscotch Chocolate Cake because after it’s baked it’s drizzled with a thick caramel sauce that’s lightly salted. Sinful.”

For the cake:

  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 2 teaspoons baking powder 2 teaspoons baking soda
  • ¾ cup cocoa powder 2 cups sugar
  • 2 cups flour
  • ½ cup buttermilk
  • ½ cup heavy cream
  • ½ cup canola oil 2 eggs
  • 1 teaspoon vanilla, extracted from pod
  • 2 teaspoons rum 1 cup hot water
  • 2 teaspoons instant espresso powder

For the caramel:

  • Splash of vanilla extract
  • 1 teaspoon fleur de sel
  • ¼ cup butter
  • ½ cup heavy cream, plus 2 tablespoons
  • 1 cup sugar

Preheat oven to 350°F. Grease and flour two 8-inch round baking pans. Set aside.

In a large stand mixer, combine the cinnamon, nutmeg, salt, baking powder, baking soda, cocoa powder, sugar and flour. Once combined, add buttermilk, heavy cream, oil, eggs, vanilla and rum; mix until smooth. Stir together the hot water and espresso powder. Pour slowly into the cake batter and stir until completely incorporated.

Pour the batter into the prepared cake pans. Bake for about 25 to 30 minutes, until baked through and a toothpick inserted in the middle comes out clean. Remove from oven and allow to cool down completely.

While cakes are cooking, combine the vanilla extract, fleur de sel, butter, ½ cup of heavy cream and sugar in a sauce pot. Bring to a boil and simmer for 5–6 minutes. Cook until caramel in color, then add the final 2 tablespoons of heavy cream. Stir for 20 seconds and let cool before glazing cake.

Chef Djibril Webb has chosen two recipes from the James Beard Cookbook and Mordecai’s Bar Manager, Rena Long, created special cocktails to pair perfectly with each dish. The menu includes: Stuffed Little Neck Clams set to pair with the Vintage Mordecai Martini and the Breaded Pork Chop with Dill Caper Gravy paired with a cocktail featuring a coconut fat-washed Benriach 10, Bittermens Tepache pineapple, burnt coconut palm sugar, sfumato, and coriander bitters. A portion of the proceeds from each of the dishes and cocktails (sold a la carte) will be donated to the James Beard Foundation.

California Wines is launching its 13th annual Down to Earth Month celebrating the state’s global leadership in wine sustainability. Throughout April, the campaign highlights California’s commitment to sustainable viticulture and winemaking through environmental stewardship, economic impact, social equity and community engagement.

California — the world’s fourth-largest wine-producing region — has long been a global leader in sustainable winegrowing. Today, 80% of the state’s wine is produced in a certified-sustainable winery. By prioritizing sustainable practices, the state’s vintners and growers produce coveted wines while protecting our environment, being a good employer and neighbor, and ensuring vibrant family farms and businesses for generations to come. California wine producers are building a wine community where economic success, environmental stewardship and social responsibility thrive together.

Dozens of Sustainable Winery Events

To give consumers an inside look at the California wine community’s innovative sustainable practices, dozens of wineries and vintners’ associations across the state are hosting interactive events, activities and special offers — from eco-focused vineyard hikes and tours to wine tastings to festivals — all month long. There are plenty of ways to celebrate and salute sustainability. Read on for tips on how to identify and enjoy sustainable wine and food during Down to Earth Month and beyond. 

When purchasing wine, check the label for sustainability certifications. The vast majority of California wine is made by wineries certified under the California Sustainable Winegrowing Alliance (CSWA)’s Certified California Sustainable Winegrowing program, and many participating wineries display a “Certified California Sustainable” logo on their wine labels or on signs in their tasting room or winery.

Likewise, more than 60% of statewide winegrape acreage is certified under CSWA or to other California sustainability programs such as Fish Friendly Farming, LODI RULES, Napa Green and Sustainability in Practice (SIP). Each has its own seal for qualified wineries to include on their wine labels.

Before heading to the store, shoppers can also visit the California Sustainable Wine website to find certified wineries, wines and vineyards across the state, or check out winners of the California Green Medal Sustainable Winegrowing Leaderships Awards announced just this week:

  • LangeTwins Family Winery and Vineyards — LEADER AWARD, given to the vineyard or winery that excels in the three “Es” of sustainability — Environmentally sound, socially Equitable and Economically viable practices.
  • Gloria Ferrer — ENVIRONMENT AWARD, given to the vineyard or winery that best demonstrates Environmental Stewardship through maximized environmental benefits from implementing sustainable practices.
  • Cooper-Garrod Vineyards at Garrod Farms — COMMUNITY AWARD, given to the vineyard or winery that is a Good Neighbor and Employer using the most innovative practices that enhance relations with employees, neighbors and/or communities.
  • Vino Farms, LLC — BUSINESS AWARD, given to the vineyard or winery that best demonstrates Smart Business through efficiencies, cost savings and innovation from implementing sustainable practices.

Sustainability-minded consumers can take a similar approach when shopping for food. For example, look for signage or labels designating products as certified organic or certified regenerative. 

Opt For Earth-Friendly — or Less — Packaging 

While traditional glass bottles will always be a vessel for wine, California wineries have embraced a variety of packaging options to reduce their carbon footprints. High-quality wines can now be found in lightweight glass, bag-in-box packaging, pouches, cans and even paper bottles. 

When shopping for produce at the grocery store, choose bulk items instead of pre-packaged foods and bring your own eco-friendly bags. Or, do your produce shopping at a local farmers market, bringing along your own reusable totes.  

Choose Climate-Friendly Foods & Wine

Not all food is created equal when it comes to sustainability. Buying local is a simple way to reduce food’s carbon footprint because it minimizes transportation emissions. 

Trading meat for more plant-based foods is another Earth-friendly option. Some of the most climate-friendly examples include fresh fruits and vegetables, mushrooms, whole grains and pulses such as beans, lentils and peas. Root vegetables require a small amount of water and growing space to produce, so potatoes, carrots and beets are all good bets. When buying nuts, opt for ground nuts or tree varieties such as pistachios, pecans and walnuts. 

For meats, consider choosing lower-impact varieties such as poultry over beef or lamb. Environmentally friendly seafood options include farmed clams, oysters and mussels; responsibly farmed shrimp; Pacific cod; sustainably farmed and wild-caught salmon; and trout. Farm Bar Ravenswood, Farmheads Hospitality’s newest concept in Chicago’s Ravenswood neighborhood, opened in the former Land & Lake restaurant space at 1970 W Montrose Avenue in November. Farm Bar brings approachable Midwestern fare straight from the farm, with an extensive menu of fresh salads and handhelds, craft cocktails, and a carefully crafted wine list.

Feverdream, the second concept from Chicago’s Milkhorse Hospitality (after Common Decency, opening next door this Winter 2024),will be made up of a team of industry veterans including Mark Steuer, Felipe Hernandez, Kelsey Kasper, and Jason Turley. Taking over the “Thank You” space that provided the food for Logan Square’s iconic Lost Lake (3154 W Diversey Ave), like the team’s first concept (Common Decency), Feverdream is built on the foundation of ensuring hospitality employees have a sustainable work/life balance with health insurance, access to an employee loyalty program, and other benefits. In line with Milkhorse Hospitality and Common Decency’s mission, Feverdream will incorporate dietary accessibility within its menus and ensure that everyone can have a great meal and killer cocktail in an intimate, cool, vibey setting and space. After announcing early plans for a flagship restaurant in Chicago in early 2023, Hawksmoor, one of London’s best-loved restaurants that’s currently ranked #2 Best Steakhouse in the World, is slated to open its location at 500 N. LaSalle Street (The LaSalle Street Cable Car Powerhouse, a designated Chicago landmark) in spring 2024.

Lettuce Entertain You Restaurants is celebrating new openings in 2024:

  • Tre Dita, set to open this winter, is a collaboration between Lettuce Entertain You Restaurants and award-winning Los Angeles Chef Evan Funke (Felix, Mother Wolf). The Tuscan steakhouse is the second of the two-restaurant project from Lettuce Entertain You in the St. Regis Chicago, following the opening of the lauded all-day Japanese restaurant Miru in May 2023. The space located at 401 E. Wacker Drive, which will feature a temperature-controlled pasta lab and a open-hearth wood-fired grill, is being designed by David Collins Studio. (Neighborhood: The Loop)
  • Sushi-san is slated to open a new location in Lincoln Park in early 2024, joining the River North and Willis Tower locations. Maxwells Trading is the brainchild of Underscore Hospitality partners Josh Tilden and Erling Wu-Bower. Josh and Erling opened Maxwells to have their ideal place to unwind, eat, drink, and listen to music with their family and friends.

Signature, the upscale sports bar and restaurant bar co-owned by Chicago chef and restaurateur Stephen Gillanders (S.K.Y, Valhalla, Apolonia) and his business partner, former Chicago Bears defensive end Israel Idonije (2003-2012; 2014), opened this January not far from Soldier’s Field (1312 S. Wabash Avenue). It will replace Great Lakes-themed restaurant Harbor and the owners hope to draw sports fans and players with their sophisticated take on sports bar favorites.
