Combining Athletic Rigor with Personalized Care and Comfort

The Highland Kings Ultra, the world’s most luxurious ultramarathon experience, returns to Scotland with a new route celebrating the Scottish Highlands around Glencoe.

The four-day Highland Kings Ultra, which combines the physical and mental challenges of a multi-day, multi-terrain ultramarathon with extravagant comfort, will launch the second event of its kind in November 2022.

Covering 120 miles of rugged yet scenic terrain on Scotland’s west coast, the ultramarathon experience begins in November 2022 with a complete training program under the guidance of some of the most accomplished athletes and professionals in the world, followed by the ultramarathon in April 2023 through the dramatic Highlands of Scotland. The course traverses mountains and valleys, winding through forests and over rocky mountain terrain, celebrating the varying physical features of the Scottish wilderness including an ascent of 18,000 feet. 

The Highland Kings Ultra, so-named for Scottish kings Kenneth McAlpin, Alexander III and Robert the Bruce who helped to shape the region, has been designed for those who want to tackle a real physical challenge but prefer to do it in style and unwind with the finer things in life.

 Training and Preparation

Athletes taking on the challenge will embark on a six-month training program, beginning November 2022, with some of the biggest names in the sport including reigning world-champion ultra runner Jonathan Albon, along with international sports notables.

Anna-Marie Watson, elite athlete and coach and winner of the Oman by UTMB; Andy Blow, fuelling and hydration expert; Alison Rose, physio for Olympic athletes; and Alan Murchison, a Michelin-starred chef experienced in devising nutritional plans for Olympic athletes.

Jonathan Albon, the undefeated OCR World Champion, Trail World Champion and Ultra SkyRunning World Champion, commented, “For both fun runners or more serious athletes, this is a great opportunity to really challenge yourself and see what you’re made of. The detail that’s gone into the experience from the training build-up to the days of the event is simply incredible. Our goal to prepare for both the physical and mental challenges that lie ahead.”

The Ultramarathon

Scheduled for April 2023, the 120-mile ultramarathon takes place against the backdrop of Scotland’s rugged west coastline traversing the deep valley and towering mountains of Glencoe, and finishing at the foot of Ben Nevis, the highest mountain in Scotland, the United Kingdom, and the British Isles.

During the event itself, participants will receive ongoing personalized and lavish care with butler service delivered by Simeon Rosset, butler to royalty, world leaders and a-list celebrities; meals prepared by a Michelin-starred chef; and physical conditioning with Olympic physiotherapists.

Athletes will rest and sleep in a purpose-built athlete village on the grounds of a traditional Scottish country estate with high-quality, glamping-style Lotus Belle tents. Each room is furnished with a king-sized bed with memory foam mattress, fine bedding and linens changed each day, wooden furniture, cushions, throws, sheepskin rug, lighting, and storage. 

Communal areas for relaxation and recovery include a hydrotherapy pool after-care.

Background

Smith notes that the success of the inaugural event convinced the team to develop it into an annual experience. “The first event was a fantastic spectacle. The athletes who took part said they thoroughly enjoyed the experience, with some wanting to return for a second time.”

The event is the only one of its kind anywhere in the world, with the physical and mental challenges of an ultramarathon combined with the ultimate in luxury. Participants will be pushed to their absolute limit on the run but will also get the chance to relax in luxury each night.

“This is not for everyone,” Smith said. “There are many other events that follow the traditional aspects of ultra running. We are doing something a bit different here. This ultramarathon is for those who seek the physical challenge but with unparalleled comfort, luxury, and athlete support.”

American marathoner Adam Geyer took part in the first Highland Kings ultramarathon alongside his brother, forming a West Coast-East Coast USA team. He commented, “I was buoyed by the opportunity to challenge myself together with my brother, supported by Alex Paxton, our PT, and Alison Rose who changed my training routine. I had a knee injury and they helped to modify my shoe selection and strengthening exercises, and I was completely pain-free for the whole marathon. These are memories that we’ll never forget – this was different from anything we had ever done before.”

Learning Korean: Recipes for Home Cooking

Returning to the flavors of his very earliest years, chef Peter Serpico was born in Seoul, Korea and adopted when he was two. Raised in Maryland, he graduated from the Baltimore International Culinary School and cooked professionally at such well-known restaurants as Momofuku Noodle Bar in New York City’s East Village. Serpico worked with David Chang, who founded the Momofuku chain, in opening two new restaurants. His job as director of culinary operations for Momofuku, Serpico garnered three stars from the New York Times, two Michelin stars and a James Beard Award. He currently owns KPOD, a contemporary Korean-American concept in Philadelphia’s University City.

Serpico was already an award winning chef when a taste of marinated short ribs and black bean noodles reeled him back through the years, giving him a taste of his original home. Now that reckoning, exploration, and elevation of the foods of his past has resulted in his debut cookbook, Learning Korean: Recipes for Home Cooking (Norton), Serpico has long been recognized as a virtuoso with ingredients but his lesser known talent becomes apparent in this book. He makes Korean home cooking easy. For anyone who has tried to master this intricate and delicious cuisine, it’s a relief to be able to easily cook Korean cuisine in a home kitchen using everyday home equipment.

Serpico starts with kimchi, that Korean staple often served in some guise or other, at every meal (and yes, that includes breakfast) with a recipe for Countertop Kimchi and then quickly segues into a master recipe that can be used to make a plethora of the fermented vegetable dishes.

“I also wanted to develop an easy ‘master’ method that could be applied to any vegetable, regardless of its texture, density, surface area, or water content,” writes Serpico before giving us the way to make Apple Kimchi, Carrot Kimchi, and Potato Kimchi, among others.

He continues with the simplification. Sure, there are some complicated recipes for those who already have or want to advance their skills with such dishes as Crispy Fried Rice–a recipe that’s a full page long. Add to that the ancillary recipes needed to complete the dish–Korean Chili Sauce, Marinated Spinach, Marinated Bean Sprouts, and Rolled Omelette which are all on different pages. But for those not up to or interested in the challenge, just flip to the recipes for such dishes as Easy Pork Shoulder Stew, Soy-Braised Beef, Battered Zucchini, Potato Salad, Chocolate Rice Pudding, and Jujube Tea as well as many others.

And while anyone experimenting with the cuisine of another country understands that they’ll need to purchase some unique ingredients, these are not budget breakers or, in many instances, so esoteric that after one use they’ll sit unused in your cabinet for an eternity. For example Serpico’s recipe for potato salad calls for Kewpie Mayonnaise instead of the mayo we typically have in our refrigerator. The latter uses whole eggs and white vinegar while Kewpie is made from just egg yolks and rice or apple cider vinegar. But the cost difference is definitely reasonable and a home chef might just find the extra richness translates to other recipes as well whether they’re Korean or not.

About the Author

Born in Seoul, South Korea, Peter Serpico was adopted when he was two years old, and was raised in Laurel, Maryland. Serpico graduated from the Baltimore International College Culinary School and his first cook job was at the Belmont Conference Center, where he worked under chef Rob Dunn. In 2006, Peter began as sous chef at the original Momofuku Noodle Bar in the East Village. For the next six years, Serpico worked with David Chang to open Momofuku Ssäm Bar and Momofuku Ko. As director of culinary operations, Serpico earned three stars from the New York Times, a James Beard Award, and two Michelin Stars, among other accolades. Serpico’s highly praised eponymous restaurant on South Street in Philadelphia opened in 2013.

Due to the COVID-19 pandemic, Serpico was reimagined as Pete’s Place. In 2022, Serpico and restaurant-partner Stephen Starr launched a revamp of Pod, a long-standing Philadelphia pan-Asian restaurant, as KPod, with a menu inspired by Serpico’s native South Korea. Hobak Jeon (Pan-Fried Zucchini)

For the Dipping Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • ½ teaspoon maple syrup
  • ¼ teaspoon gochugaru (Korean red-chile flakes)
  • ¼ teaspoon sesame seeds
  • 1 scallion, trimmed and thinly sliced (white and light green parts)

For the Zucchini

  • 1 large Korean zucchini or 2 American zucchini (about ¾ pound), sliced into ½-​inch-thick rounds
  • 1 teaspoon all-​purpose flour
  • 1 large egg
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil

Make the dipping sauce: Whisk all ingredients in a bowl. This sauce will keep in the refrigerator in a covered container for 1 week.

Prepare the zucchini: In a medium bowl, toss the zucchini and flour, ensuring each piece is lightly coated.

In a separate bowl, whisk the egg and fish sauce, making sure to break down the egg white.

In a medium skillet or sauté pan, heat the vegetable oil over medium heat. Working in batches to avoid overcrowding, dip and coat the floured zucchini rounds in the egg batter, then add to the skillet and cook until lightly browned, about 3 minutes per side. Use a spatula to transfer finished zucchini rounds to a wire rack lined with paper towels.

Serve as banchan or as an appetizer with the sauce. The zucchini can be enjoyed hot or at room temperature; cooked zucchini pieces can be held inside an oven set to warm.

Ground Beef Bulgogi

  • 1 pound lean ground beef
  • 1 medium yellow onion (8 ounces), halved and thinly sliced
  • 2 cloves garlic, minced or finely grated
  • 2 scallions, trimmed and cut into 1-inch pieces (white and light green parts)
  • 1 tablespoon sesame oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon maple syrup
  • 1/2 teaspoon fine salt
  • 1 teaspoon vegetable oil
  • Cooked white rice, for serving (see NOTE)
  • Kimchi, for serving (optional)
  • Fresh lettuce or cabbage leaves, for serving (optional)

In a large bowl, stir together the beef or plant-based meat, onion, garlic, scallions, sesame oil, soy sauce, maple syrup and salt until combined.

In a large saute skillet over medium-high heat, heat the oil until shimmering. Add the beef mixture and cook, stirring occasionally to break up any large chunks, until cooked through, about 10 minutes.

Serve the bulgogi in bowls with rice, kimchi, and lettuce or cabbage leaves for wrapping, if using.

Healthier Southern Cooking: 60 Homestyle Recipes with Better Ingredients and All the Flavor

Can true Southern cuisine—think fried chicken, mashed potatoes and gravy, macaroni and cheese, and fried okra—be transformed into healthier fare without losing the flavors and tastes that make this type of cookery so satisfying?

While most of us would say no way, Eric and Shanna Jones, authors of Healthier Southern Cooking: 60 Homestyle Recipes with Better Ingredients and All the Flavor, are out to show that healthy doesn’t mean boring. Their Southern credentials are impeccable. A husband and wife team, Eric is a native of Louisiana and Shanna hails from Houston, Texas, where she was born and raised. Together, they’re the founders of Dude That Cookz, a creative cooking blog with lots of great recipes and photos. Eric is the cook and Shanna a photographer who manages the brand, a role that also includes maintaining their blog and social media content and whatever else needs to be done so that Eric can focus on cooking. But Shanna also contributes to the kitchen as an avid baker. Married for more than a decade, the couple has two children.

And a love of cooking

Eric, who describes himself as a country boy and country cook, learned his way around a kitchen early on from his grandparents. His grandmother made—and he learned—the type of Louisiana Southern cuisine that tastes oh so good but definitely doesn’t meet the criteria for low in calories or heart healthy. But his own need for what he terms as “dietary adjustments” as well as his parents’ early demise from health issues made him rethink the food he loved to cook and eat. The conundrum was how to make rich and soul-satisfying Southern food that’s healthy without losing the flavor.

Well, it turns out that you can, often by substituting ingredients without losing the full mouth feel that fats provide. Cooking clean is the key. Clean is the term Eric and Shanna give to their recipes that have less salt, less fat, less sugar, and a lot fewer calories.

Creamed corn, a staple of the Jones’ kitchen, is reimagined by substituting evaporated milk for heavy cream and using coconut milk and Parmesan cheese. Peach cobbler, that classic Southern dessert, eschews the usual thick sugary syrup, reducing the amount of sugar and instead adding maple syrup as an ingredient.

Southern potato salad calls for lots of mayo and, of course, potatoes themselves are starches that convert to sugar in our system. The solution? Less mayonnaise, the use of red potatoes since they have less carbs and calories than russet potatoes, and adding hard boiled eggs—all of which, says Jones, make a dish that is full of flavor and texture.

But what about that Southern staple: fried chicken with gravy? The answer again is coconut milk, this time replacing buttermilk. Then instead of deep frying, it’s pan-fried in a minimum amount of sunflower oil. As for the gravy, 2% works just as well as cream or whole milk.

In the cookbook, the first by the couple but undoubtedly not the last, each recipe has a write-up by Jones as to how he’s reducing the caloric footprint of the dish as well as lowering the level of salt but maintaining the flavor profile with the addition of other herbs and spices.

Of course, Jones admits, sometimes you just need a double-stacked burger. But the beauty of all this, by eating clean, once in a while you can eat dirty without a lot of guilt.

Chicken Fried Chicken with Gravy

  • 1 pound (454 g) boneless, skinless chicken breasts
  • 2 teaspoons (4 g) smoked paprika
  • 3 teaspoons (6 g) black pepper, divided
  • 1 1/2 teaspoons (5 g) garlic powder, divided
  • 1 teaspoon chili powder
  • 2 teaspoons (4 g) Himalayan pink salt, divided
  • 1/2 teaspoon ground thyme
  • 1/4 teaspoon cayenne pepper
  • 2 cups plus 2 tablespoons(510 ml) sunflower oil
  • 2 large eggs
  • 1/2 cup (120 ml) canned light coconut milk
  • 1 tablespoon (15 ml) Sriracha sauce
  • 2 1/4 cups (281 g) all-purpose flour, divided
  • 2 tablespoons (16 g) cornstarch
  • 1 teaspoon baking powder
  • 2 tablespoons (28 g) unsalted butter
  • 1 tablespoon (9 g) minced garlic
  • 2 cups (480 ml) 2% milk
  • 1 tablespoon (6 g) grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoons onion powder

Cut each of the chicken breasts in half. Cover the chicken with plastic wrap, and lightly pound it with a meat tenderizer until it is 1/2-inch thick.

Season the chicken evenly with the smoked paprika, 2 teaspoons of the black pepper, 1 teaspoon of the garlic powder, chili powder, 1 teaspoon of Himalayan pink salt, thyme and cayenne pepper.

In a large bowl, mix together the eggs, coconut milk and Sriracha sauce. Submerge the chicken into the egg mixture. Allow the chicken to marinate for 15 minutes in the refrigerator.

In a large ziplock bag, combine 2 cups of the flour, 1⁄2 teaspoon of the Himalayan pink salt, cornstarch and baking powder. Place the marinated chicken breasts in the flour mixture. Close the bag, shake it well to coat the chicken and then place it in the refrigerator for 15 minutes.

Heat 2 cups of sunflower oil in a deep 12-inch skillet over medium-high heat. Preheat the oven to 175°F. Add the chicken to the skillet and pan-fry it for 4 minutes on each side, until it is golden brown and crispy and its internal temperature reaches 165°F.

Next, heat a 2-quart saucepan over medium heat. Add the remaining 2 tablespoons of sunflower oil and the butter. Once the butter has melted, add the minced garlic and cook it for 1 minute.

Stir in the remaining 1/4 cup flour to form a thick paste, then add the milk. Stirring the mixture constantly, add the Parmesan cheese, oregano, onion powder, remaining 1 teaspoon of black pepper, remaining 1/2 teaspoon garlic powder and remaining 1/2 teaspoon of Himalayan pink salt. Reduce the temperature to low and cook the gravy for 8 to 10 minutes, until it is thick and silky.

To serve, pour the gravy over the chicken or serve the chicken with the gravy on the side.

Peach Cobbler

For the crust

  • 1 1⁄4 cups (156 g) all-purpose flour, plus more as needed
  • 1 teaspoon granulated sugar
  • 1⁄2 teaspoon Himalayan pink salt
  • 1⁄2 cup (114 g) cold unsalted butter
  • 6 tablespoons (90 ml) cold water
  • 1 large egg, beaten
  • Pinch ground cinnamon

For the filling

  • 5 cups (770 g) thickly sliced fresh or thawed frozen peaches
  • 1⁄2 cup (120 ml) pure maple syrup
  • 1⁄4 cup (55 g) light brown sugar
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon bottled lemon juice
  • 1 teaspoon pure vanilla extract
  • 1⁄4 teaspoon ground nutmeg
  • 1 teaspoon cornstarch
  • 1 teaspoon water

To make the crust:

Combine the flour, granulated sugar and Himalayan pink salt in a medium bowl. Cut the cold butter into small pieces. Add the butter to the flour mixture and, using a pastry cutter, incorporate the butter into the flour until crumbs appear. Slowly add the cold water to the flour and mix it into the flour using your hands or a spatula until the dough starts to form a ball. Dust a work surface with additional flour.

Transfer the dough ball to the prepared work surface and knead it 4 to 5 times, until it is smooth and elastic. Tightly cover the dough with plastic wrap and place it in the refrigerator to chill for 30 minutes. Preheat the oven to 375°F. Lightly grease 2 (6 1/2-inch) cast-iron skillets.

To make the filling:

Combine the peaches, maple syrup, brown sugar, cinnamon, lemon juice, vanilla and nutmeg in a large bowl. Stir the ingredients together well. In a small bowl, combine the cornstarch and water to create a slurry. Add the slurry to the peaches. Mix everything together well and set the bowl of filling aside.

Plant Based Mexican: Fast, Fresh Recipes from a Mexican-American Kitchen

Unless you’re deeply committed to a life of vegetables, words like plant-based can be a turnoff when it comes to menus and cookbooks. Sure, many of us, myself included, want to expand our vegetable repertoire but still need to indulge their inner carnivore—particularly when we think of a bleak future with nothing but quinoa and steamed broccoli. But Kate Ramos, who created the blog ¡Hola! Jalapeño! with the goal of merging authentic ingredients and flavors with modern preparations, has our back. Taking that philosophy, Ramos has written her Plant Powered Mexican: Fast, Fresh Recipes from a Mexican-American Kitchen , published by Harvard Common Press, it’s a lushly photographer book with recipes that are so wonderful it’s easy to forget there’s nary an animal protein anywhere in her book.

Instead, Ramos offers us such dishes as Chileatole (a thick soup) with Masa Dumplings and Lime Crema, Potato and Collard Greens, Crispy Tacos with Ancho Chile Crema, and my personal favorite–One-Pan Cheesy Rice Chile Relleno Casserole.

In her first chapter, Ramos tells us what’s in her pantry, providing us with an entrée into the world of chiles, peppers, oils, spices, herbs, and Mexican cheeses as well as the equipment she relies upon. The latter are simple enough. Just a comal (but she notes you can use a cast iron skillet instead) and a molcajete and tejolote, a volcanic stone mortar and pestle for grinding spices and making chunky salsas. As for the ingredients she commonly uses, I’d be willing to bet that many of us have such items as black pepper, smoked paprika, garlic powder, kosher salt, and coriander in our spice drawer already. That just leaves a variety of dried chile powders—ancho, guajillo, arbol, and habanero as well as a few other ingredients that can be bought as needed. Unlike many entrees into a new cuisine, Ramos keeps it simple and inexpensive.

Six of the remaining chapters are divided into cooking methods—slow cookers, stovetop, grills, and oven. Instant Pot aficionados will be very happy to hear that there’s an entire chapter devoted to recipes using the beyond popular small kitchen appliance. Ramos cooks out of a small kitchen and says she’s never been enamored of kitchen equipment until, that is, she fell in love with her Instant Pot. Besides, its ability to cook beans—a common ingredient in Mexican cookery–quickly, Ramos offers a selection of recipes she’s developed for quick dinners for busy home cooks like Black Bean Enchilada Casserole, Smoky Tomato Tortilla Soup, and her Loaded Sweet Potatoes with Lime Crema, Sofrito Beans, Roasted Kale, and Chives.

The recipes I made all worked without me having to make tweaks to salvage them. That’s a plus because I have encountered recipes that haven’t been tested or at least not well evaluated before being included in a cookbook. If I have one complaint about Plant Powered Mexican it’s that the font is small so instead of just glancing at the recipe while cooking, I often had to pick up the book to be able to read the directions. It’s a small complaint and shouldn’t stop anyone who is interested in plant-based cooking from purchasing this well-written cookbook.

Vegan Picadillo Tostadas with Rice and Peas

For the tostadas

12 6-inch corn tortillas

For the picadillo

  • 2 tablespoons avocado or sunflower oil
  • 1 medium white onion chopped
  • 2 medium carrots chopped
  • 3 cloves garlic chopped
  • 3 small Yukon gold potatoes peeled and diced
  • 1 pound plant-based beef
  • 1 recipe Magic Spice Mix see below
  • 1 ¼ cups Gluten-free beer or vegetable broth
  • ½ cup frozen peas no need to thaw
  • ¼ cup chopped fresh Italian parsley

For serving

  • 3 cups steamed rice
  • Lime wedges
  • 1 large avocado diced
  • 1-2 medium jalapeños thinly sliced
  • Green salsa

To make the tostadas: Heat the oven to 350°F. Once the oven is ready, lay the tortillas directly on the oven racks with plenty of room around them for air to circulate. (I put six on the top rack and six on the bottom in my oven.)

Bake for about 15 minutes, turning the tortillas halfway through, until they are very crisp and crack if you break them. Look for a light brown color, no darker than the shade of a roasted peanut. Remove the tortillas to a serving platter.

To make the picadillo: Heat the oil in a large frying pan over medium-high heat. Add the onion, carrots, garlic, and potatoes. Cook until the garlic and onions start to brown, about 5 minutes.

Add the plant-based beef and spice mix, breaking up the meat with the back of a wooden spoon. Continue cooking until the beef is browned, about 3 minutes. Add the beer or broth, reduce the heat to medium-low, and cover. Simmer the picadillo for about 10 minutes or until the veggies are tender. Stir in the peas and parsley, and cook for about 1 minute.

To Serve: Spread ¼ cup of rice on a tostada, and top with ¼ cup picadillo. Pass the garnishes at the table.

Magic Spice Mix:

Mix 1 tablespoon guajillo chile powder, 1 teaspoon kosher salt, ½ teaspoon ground black pepper, ½ teaspoon smoked paprika, ½ teaspoon garlic powder, ½ teaspoon ground coriander, ½ teaspoon dried epazote or oregano (preferably Mexican) together in a small bowl until evenly combined. Use immediately or keep in a container for up to 1 month.

Chilled Avocado Soup

FOR THE SOUP:

  • 1 large ripe avocado, peeled and pitted
  • 2 cups cold water
  • 2 small Persian cucumbers
  • 2 scallions, trimmed and chopped
  • 1/4 cup fresh lime juice (from 2 limes)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon kosher salt

FOR THE FAIRY DUST

  • 1/4 cup roasted, salted sunflower seeds
  • 1/4 cup white sesame seeds
  • 1/4 cup popped amaranth
  • 1/4 cup edible flower petals, such as nasturtium, pansies, marigolds, or cornflowers
  • 1 teaspoon toasted cumin seeds

To make the soup:

Blend soup ingredients. Add avocado, water, cucumbers, scallions, chile, lime juice, cilantro, oil, and salt to a blender. Blend until smooth.

Chill. Cover and chill in the refrigerator until completely cold, at least 2 hours.

To make the fairy dust:

Combine. Add the sunflower seeds, sesame seeds, amaranth, flowers, and cumin seeds to a small bowl. Mix gently.

Serve. Ladle the cold soup into bowls and sprinkle fairy dust over the top.

A visit to Augusta, GA simply would not be complete without sampling a true Southern pimento cheese dish. From The Partridge Inn’s restaurant, 8595, here is Executive Chef Thomas Jacobs’ Fried Green Tomatoes and Pimento Cheese recipe.

Green Tomato Recipe

Ingredients

  • 1 C all-purpose flour
  • 1/2 tsp kosher salt
  • 1 tsp blacken seasoning
  • 1/4 tsp fine-ground black pepper
  • 1/4 C buttermilk
  • 2 large eggs
  • 1/2 C panko breadcrumbs
  • 1 C yellow cornmeal
  • 2 large green tomatoes, sliced 1/4-inch thick

Instructions

Line a baking sheet with paper towels and top with a cooling rack. Set up a dredging station with 3 shallow bowls. In the first bowl, add the flour, salt and pepper, and whisk to combine. In the second bowl, beat the buttermilk, eggs and blacken season together. In the third bowl, stir together the cornmeal and panko.

Working in batches, dredge both sides of the tomato slices in the seasoned flour, shaking each piece to remove any excess.

Dip the tomato slices into the egg and buttermilk mixture. Then coat the tomato slices in the breadcrumb/panko mixture evenly on both sides. Place the prepared tomatoes in the basket of an air fryer and spritz the top with olive oil. Air fry at 400°F for 5 minutes, flip and spritz with olive oil, and continue to air fry for 3 additional minutes, or until golden brown. Serve immediately.

Pimento Cheese

Ingredients

  • 1 C shredded extra-sharp cheddar cheese
  • 1 C white cheddar
  • 1/2 C smoked Gouda cheese
  • 1 C Tomme Cheese
  • 8 oz cream cheese, softened
  • 2 1/2 C mayonnaise (Dukes preferably)
  • 1/4 tsp garlic powder
  • 1/4 tsp ground cayenne pepper
  • 1/4 tsp onion powder
  • 1 jalapeno pepper, seeded and minced
  • 4 oz diced pimento, drained
  • salt and black pepper to taste

Instructions

Place the cheddar, white cheddar, Gouda, Tomme and cream cheeses, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno and pimento into the large bowl of a mixer. Beat at medium speed, with paddle, if possible, until thoroughly combined. Season to taste with salt and black pepper.

Add pimento cheese on top of fried green tomatoes.

10 Great Autumn Destinations in California’s Gold Country

There’s fool’s gold, gold dust and nuggets, and high wattage gold when fall amps up the colors in the aptly named Golden State come October and November. So forget leaf peeping along the Eastern Seaboard or in the Midwest and head along the California Gold Rush Trail in the state’s Gold Country. It’s an experience of small towns that boomed during the Gold Rush era when those hoping to strike it rich descended upon the stunning Sierra Nevada Mountains.

In California’s Gold Country, Historic Hwy 49 offers an array of colorful foliage – dogwood, aspen and maple light up the Mother Lode with orange, red and yellow. In Coloma, the Marshall Gold Discovery State Historic Park affords spectacular view along the American River as well as many stands of colorful trees.

Stop at one of the Apple Hill Grower farms and pick your own pumpkins, sample mouth-watering baked goods and Sierra Foothill wines. Continuing south, colorful stands of dogwood trees complement the Giant Sequoias at Big Trees State Park.

Traveling north on Highway 49, the charming town of Mariposa is the southernmost destination in the Gold Rush chain of towns. Historic and lively, Mariposa was founded in 1850 and boasts a plethora of shops, restaurants and venues such as  Mariposa Museum and History Center named one of the best small museums in America by the Smithsonian Institute and  the California State Mining and Mineral Museum

Locals call Coulterville “the town that was too tough to die.” Once a major mining and supply town, Coulterville was named after George and Margaret Coulter who arrived in 1849 and began selling supplies after learning that miners had to travel some 30 hard miles to buy what they needed. Two years later gold was discovered. Boom is the operative word as to what happened next. The town prospered. For an interesting tidbit of local history, travel through the downtown off of Highway 49 and turn left on Kow Street to the intersection of Chinatown Main Street–yes, that’s really the name of the street. Located on the corner is what was the Sun Sun Wo Co. It’s an old adobe building, one of a handful left in California (for more, click here).

Built in 1851, it was first owned and operated by Mow Da Sun and his son, Sun Kow and run by Chinese until 1926. Said to have an opium den in the back, it was so successful as a general store that a second store ten miles away in Red Cloud. And if you’re wondering how the Chinese were treated, we can report that according to Sierra Nevada Tourism, a site developed in conjunction with National Geographic, the town’s hanging tree is where an outlaw named Leon Ruiz met his fate in 1856 after robbing and murdering two Chinese miners of $600 in gold, showing not only the money to be made in a Gold Rush town but also that the killing of Chinese did not go unpunished.

Now designated the California State Historical Landmark No. 332. Coulterville also serves as the base point of the newly designated John Muir Highway.

The intriguingly named Chinese Camp, once a busy mining camp with thousands of inhabitants, the town is now for all intents and purposes a ghost town. Tucked away in the foothills of the Sierra Nevada Mountains, its buildings are a feature in movies and television shows about the Old West.

Travel on to Sonora, another Gold Rush town. Settled by miners from Sonora, Mexico in 1848, Sonora, known as the “Queen of the Southern Mines” offers a vast historical perspective with thriving businesses and a bustling downtown housed in historic buildings dating back to the mid-1800s. Check out such beauties as St. James Episcopal Church, built in 1860 and the oldest Episcopal church in the state.

Finish your drive to Yosemite National Park up Highway 120 when the valley floor is its most colorful.

Boysenberry Pie at The Ahwahnee in Yosemite

On the menu at the venerable Ahwahnee Inn for more than a quarter of a century, their Boysenberry Pie is a must try dessert. Served in the Ahwahnee Dining Room, with its 34-foot-high beamed ceiling, floor-to-ceiling mullioned windows, granite columns, Gothic-style chandeliers, an dexposed stonework, is a resplendent place to enjoy such a treat. The dining room, designed by famed architect Gilbert Stanley Underwood in a mélange of Art Deco and Arts and Crafts architectural styles and flourishes of Native American and Middle Eastern elements to attract high-end visitors, opened in 1927. Located on the first floor of The Ahwahnee Hotel, in itself a masterpiece of an opulent and gracious past, in eastern Yosemite Valley, the entire building was made using 5,000 tons of stone, 1,000 tons of steel, and 30,000 feet of lumber. 

The Ahwahnee Inn Boysenberry Pie

Makes: One 10” pie

Pie Filling

  • 1 ½ pounds fresh or frozen boysenberries
  • ¾ cup sugar
  • 1 ¼ oz clear instant gelatin
  • Pinch of salt

In a saucepan on a low heat add frozen boysenberries and slowly cook for 5 minutes.  In a bowl combine sugar, gelatin and salt and mix.  Add sugar mixture to sauce pan.  Cook for another 5 minutes.  Stir often to avoid burning.  Set aside and let cool.

Pie Dough

  • 9 ounces all-purpose flour
  • Pinch of salt
  • 1 ½ teaspoon sugar
  • 4 ½ ounces soft butter
  • 1 ½ ounces very cold water

In a food processor add flour, salt, sugar and softened butter.  Turn on and mix ingredients until they are evenly distributed.  Then add water all at once.  Turn off food processor as soon as the dough binds and comes away from the sides of the bowl. 

Divide dough into halves and roll each into a ball. Refrigerate for one hour.  Roll out on doughball into a circle large enough to fit a 10-inch pie pan.  Preheat oven to 350’F and bake pie shell for 5 minutes. 

Roll second dough ball into a large circle and cover with a towel.  Place filling in shell and cover with remaining pie dough. Use an egg wash to seal the pie rim.  Cut four slits in the top of the pie and brush remaining egg wash across the top. 

Place in the 350° F and bake until golden brown, about 15 to 20 min.  Let cool before serving.  

Firefall Cocktail

The Ahwahnee Bar

  • 1/2 shot tequila (we prefer Sauza Gold)
  • 1/2 shot Creme de Cocoa Brown (we prefer DeKuyper)
  • 2 tablespoons Firefall Hot Chocolate Mix, see recipe below

Fireball Mix:

  • 2 cups Nestle Hot Chocolate Powder
  • 1 tablespoon pasilla chili powder
  • 1 tablespoon cinnamon

Pour tequila and Creme de Cocoa Brown into an Irish coffee mug.

Add the Firefall Hot Chocolate Mix. Add boiling water and stir well. Top with whipped crème.
Sprinkle whipped cream with pasilla chili and cinnamon.

Double Chocolate Bread Pudding from The Ahwahnee Dining Room

  • 1 quart heavy whipping cream
  • 2 pieces vanilla beans pod (split and scraped)
  • 8 ounces granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 7 pieces egg yolk
  • 2 pieces large croissants (baked and sliced crosswise)
  • 2 ounces milk chocolate chips
  • 2 ounces dark chocolate chips

.In a stainless mixing bowl, incorporate the egg yolk, ground cinnamon, sugar and a cup of heavy whipping cream.

Split and scrape the seed of the vanilla pods. Place pods and beans in a sauce pot and the remaining heavy whipping cream and bring to a boil. Pour the hot cream into the egg mixture and stir.

Arrange half of the croissant slices in a baking dish. Sprinkle half of the milk and dark chocolate chips over the croissants. Pour half of the hot custard mixture over the croissants to soak. Repeat the layers.
Bake at 320° F degrees for 25 – 30 minutes.

Fall Vineyard – Carneros

In the Sonoma ValleyHighway 12 is an incredible route for fall foliage, California-style. The road between the town of Sonoma and Kenwood winds through vineyards and picturesque hamlets. In fall, the rows of vineyards come alive in stunning shades of crimson, orange and gold.

Visitors can take in the scenery from the car before stopping at the area’s tasting rooms and restaurants such as Glen Ellen Star where the culinary team is led by Chef Ari Weiswasser and his wife Erinn Benziger-Weiswasser.

In Glen EllenJack London State Historic Park offers 29 miles of backcountry trails that go through mixed forest, oak woodlands and grassy meadows. You’ll also pass the London’s charming cottage and burned-out castle ruins.

Nearby at Benzinger Winery, guests can enjoy a tasting outside among the oak trees and take the Biodynamic Tram Tour of the property to learn about their winemaking process. Tuscan-style Viansa Winery affords a stunning valley view that takes in the autumnal palette across the valley. Or at Kunde Family Winery, you – and your pup – can take in a vineyard hike pre or post tasting.

No matter what you choose, it’ll be a colorful confetti road trip.

For Chef’s Who Love History: Vegetarian Recipes

Though vegetarianism is much more mainstream today than it was even ten years ago, the movement is not new. Back in the early part of the last century, though vegetarianism was rare, it was practiced in Southwest Michigan. Indeed, though it’s surprising to learn, starting in 1908 there were several vegetarian restaurants that thrived until the mid-1970s.

The premise is similar to the current philosophy of  sustainable local agriculture – eating what is grown near home–contributed to the popularity of three restaurants that thrived for a considerable amount of time. They were Eden Springs Park Restaurant (opened in 1908 and closed in 1932), Mary’s Vegetarian Restaurant which opened in 1932 and closed 34 years later and Mary’s Café, in business from 1931 to 1975 in downtown Benton Harbor.

Produce served in these establishments was grown on the grounds of the Israelite House of David in Benton Harbor, founded in 1903 and reorganized by Mary Purnell in 1930 as Mary’s City of David.

1912 Vegetarian Cookbook

According to Ron Taylor, of Mary’s City of David, one of the nation’s oldest continuing communes, the freshness of the ingredients used was one of the reasons for the long time popularity of the restaurants. Taylor, who worked at Mary’s Café for the last four years of its existence, has long been an archivist of the colony’s history. Several years ago he reprinted a limited edition of the 1912 cookbook titled “Vegetarian Cookbook” with recipes from the Eden Springs Restaurant.

Now, Taylor has put together the “Vegetarian Cookbook” that includes not only the recipes from the 1934 cookbook but also photos and historic anecdotes from the years when Mary’s City of David had their own bakery, dairy, cannery, chickens (for eggs) and orchards.

“We had a greenhouse for growing vegetables in the winter,” said Taylor at the time we chatted. Taylor, an avid historian dedicated to preserving the unique history of the community.

Mary’s City of David also attracted a large clientele of visitors who spent the summer in the numerous cottages on the property.

“The cottages didn’t have cooking facilities,” said Taylor, “and so people ate at the restaurant.”

Interestingly, one of the largest groups of returning summer residents were Romanian Jews from Chicago.

“They were attracted to coming here because vegetarian is Kosher,” said Taylor.

The colony’s commitment to vegetarianism came from the Gospels, as Taylor points out in the book by quoting Biblical passages including ‘Meats of the belly and the belly for meats and both shall be destroyed (1 Cor. 6-13).

The book also includes old menus from Mary’s Restaurant which was located on Britain Avenue. Like most old menus, it’s always amazing to see how cheap prices used to be. The 1947-48 menu lists such items as a pimento cheese sandwich costing 20 cents and homemade pie or cake ten cents and spaghetti in tomato and cheese sauce going for 35 cents. For those who often splurge on lattes or cappuccinos, take note, a cup of coffee with extra cream cost 15 cents while something called Boston coffee sold for 15 cents as well.

“This is a book of recipes,” Taylor writes in his introduction. “It continues authentic and unique tastes of a history, from a community of that generation. It was designed to serve a healthy and nutritious meal for a working class. Convenience to a fresh market of local produce precluded the use of exotic ingredients and thus retained the colony’s desire of making an affordable and family friendly menu. It remains a book of ingredients that saw its popularity within the era of one of America’s greatest generations.”

Mary’s City of David

Recipes

Note: These are old fashioned recipes where the directions are often vaguer than what we’re used to in modern recipes. Often, there are no temperature settings for oven and instead terms like slow oven and hot oven are used. Also, the cookbook uses the term tablespoonfuls, cupfuls, etc. rather than the current terminology of cups, teaspoons and the like.

Butter-Scotch Pie

  • 2 cups brown sugar
  • 4 tablespoons flour
  • 2 cups milk
  • 3 eggs
  • 2 heaping tablespoons butter
  • 1 teaspoon vanilla

Beat the yolks of eggs until light; add flour, sugar, milk and butter; cook in double boiled until thickened. Remove from fire and add vanilla. Have ready two under crusts baked and fill with the butter-scotch. Whip the whites of eggs to a stiff froth and add two tablespoons sugar. Spread lightly over the top of the pies and set in a slow oven to color a golden brown.

Sidebar: Mary’s City of David Bakery

Within their first year of business, the bakers at Mary’s City of David Bakery were working seven days a week providing food for the more than 300 members of the colony as well as for the baked goods shop in the downtown Benton harbor hotel and the resort restaurant. Baked good as well as milk, butter, cream and eggs, all grown on the colony’s grounds, were also sold at the bakery. Here are several baked goods recipes from the cookbook that were made at the bakery.

Bran Muffins

  • 1 cup flour
  • 1 teaspoon salt
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • 1 cup bran
  • 1 egg, beaten light
  • 1 ¼ cups milk
  • 3 tablespoons melted shortening

Sift the first four ingredients together twice; add the bran, the egg, milk and shortening. Mix together thoroughly. Bake in hot, well-greased muffin pans about 25 minutes.

Cheese Dreams

  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • 1 cup flour
  • ½ cup cheese
  • 1 tablespoon oil

Mix and sift dry ingredients. Work in oil lightly with tips of fingers. Add liquid gradually and then sprinkle in the cheese which has been grated. Toss on floured board and roll out one quarter inch in thickness ad cut with small cutter. Bake in hot oven ten minutes and serve hot with salad course.

Bourbon Apple Cider

Fall is a season that begs to be draped in comfort and warmth. This spiced cocktail is exactly what you need to warm up on a cold night. To get those cheeks glowing, you’ll need bourbon, apple cider, vermouth and bitters. Serve your Bourbon Apple Cider over ice with a squeeze of fresh lemon juice and a sprig of thyme. This is a full-flavor cocktail, and the sourness of the lemon balances beautifully with the sweet notes of caramel, vanilla and apple.

How do you like them apples? Because, quite frankly, we’re a little obsessed.

Manhattan

Meet the Manhattan: Sweet, smooth, and sophisticated. This iconic cocktail was created in the late 1800s, and the original recipe has been enjoyed ever since! It’s a whiskey-based cocktail that’s surprisingly mellow and sweet. Made with whiskey, sweet vermouth, and bitters and garnished with a maraschino cherry, it’s a simple recipe. This delicious drink is best served before dinner to welcome your guests. Although there are a few versions of the classic, the traditional Manhattan cocktail will never go out of fashion.

Hanky Panky

Gin-lovers, don’t worry. We haven’t forgotten about you. Make a Hanky Panky if you want a fall (or winter) cocktail that’s packed with zesty flavors and herbal undertones.

This sweet gin martini is anything but discreet: the gin makes it a little naughty, while the sweet vermouth makes it a little nice. But it’s the addition of the Italian amaro (bitters) that gives the Hanky Panky cocktail its unique and complex flavor. Best enjoyed fireside, with good friends.

Hot Pumpkin Pie Cocktail

Drinkable pumpkin pie in a glass, anyone? Yeah, we thought so!

If you love the taste of a pumpkin spice latte, then choose this fall cocktail to be the star of your Thanksgiving feast this year. Made with vodka, Irish cream, pumpkin pie puree and cool whip, it’s as delicious as a dessert. Serve your Hot Pumpkin Pie cocktails in warmed mugs, topped with whipped cream and a sprinkling of cinnamon. As an extra treat, you can serve baked pumpkin pie crusts on the side for some decadent dipping.

Bourbon Entertaining Made Easy By Experts

Inspired by the amazing win of Strike Rich, the second biggest upset in the Kentucky Derby’s history, I decided to delve into Kentucky food history by reading and cooking from a new book on the subject, it’s title compelling asking Which Fork Do I use with My Bourbon?: Setting the Table for Tastings, Food Pairings, Dinners, and Cocktail Parties from University Press of Kentucky.

Wondering what fork to use when serving bourbon isn’t a question we commonly ask, but authors Peggy Noe Stevens and Susan Reigler are entertainment and bourbon experts who travel frequently conducting seminars and tastings. The impetus for their book stems from being constantly asked how to go about hosting the perfect cocktail or dinner party starting from table setting to pairing the best foods and bourbons.

Their bourbon credentials are impeccable. Stevens is an inductee into the Bourbon Hall of Fame, the first female master bourbon taster, founder of the Bourbon Women Association, and one of the originators of the Kentucky Bourbon Trails. Reigler is the author of several bourbon and travel books including Kentucky Bourbon Country: The Essential Travel Guide and The Kentucky Bourbon Cocktail Book, a former restaurant critic and beverage columnist, and past president of the Bourbon Women Association as well as a certified bourbon steward.

Now Stevens and Reigler are the type of Kentucky women who if they were going to tailgate at the Kentucky Derby wouldn’t bring a cooler filled will take-out from the deli counter of the local grocery store to be served on  paper plates and eaten with plastic dinnerware. This type of Kentucky woman brings great grandmother’s silver serving dishes and great great Aunt Mabel’s fine China. And, of course, the food would be equally well turned out though not necessarily fussy or hard to make.

Despite the elegance of it all, Stevens and Reigler don’t want anyone “to work their fingers to the bone planning and executing.”

After all, they say, “the best form of bourbon etiquette is simple to make people feel comfortable.”

The following recipes are from Which Fork Do I Use With My Bourbon.

Dark and Bloody Mary:

  • 1 teaspoon salt, pepper, paprika mix
  • 2 ounces bourbon
  • 2 large lemon wedges
  • 1 tablespoon Worcestershire sauce
  • 1 can (6 ounces) tomato juice

To prepare the seasoning mix, combine in a mortar (or spice grinder) one part each smoked sea salt, smoked black pepper, and smoked paprika (the authors suggest these should all come from Bourbon Barrel Foods– bourbonbarrelfoods.com). Finely crush with a pestle and shake together in a jar.

To a pint glass or a large mason jar filled with ice, add the bourbon, squeeze and drop in the lemon wedges, and add 1teaspoon of the seasoning mix and the Worcestershire sauce. Shake. Add more ice and the tomato juice. Shake again.

Garnish with a long straw and baby corn, large pitted black olive, and cherry pepper, all on a stick.

Wabbit

Combine all the cocktail ingredients in a shaker. Shake on ice and double-strain into a coupe glass. Garnish with a sage leaf.

Date Syrup

Macerate 1 pint of dates with rich syrup (1 pound of “sugar in the raw” and ½ pound of water, heated and stirred until the sugar dissolves).

Susan’s Tuna Spread:

Author Susan Reigler came across this recipe forty years ago in a small spiral-bound  book of recipes by James Beard that was included with her purchase of a Cuisinart food processor. She always gets raves when she serves it. Spicy and tangy, this is not your bachelor uncle’s bland tuna fish salad.

  • 2 5-ounce cans albacore tuna packed in water, drained
  • cup mayonnaise
  • ¼ cup tightly packed fresh parsley sprigs
  • Juice of 1 lemon
  • 1½ tablespoons coarsely ground black pepper

Combine all the ingredients in a food processor and blend briefly.

Bourbon Pineapple Poundcake:

  • 1 cup brown sugar
  • ¼ cup bourbon
  • 1 to 2 fresh pineapples, quartered and sliced
  • in thick strips
  • 1 pound cake

Preheat the oven to 175 degrees. Mix the brown sugar and bourbon until it forms a thin paste. Lay the pineapple strips side by side in a baking dish.

Brush the brown sugar mixture thickly on the pineapple strips. Put the dish in the oven and allow the mixture to melt over the pineapple until warm.

Lay the pineapple strips over slices of pound cake and ladle any extra juice over each slice. Serve immediately.

Woodford Reserve Chocolate Bread Pudding:

  • 12 cups stale French bread, diced in 1-inch cubes
  • 1 quart whole milk
  • 3 eggs, beaten
  • 1¾ cups sugar
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • 6 ounces dark or bittersweet chocolate, chopped in large chunks
  • 3 tablespoons unsalted butter, melted

Place the bread cubes in a large bowl and toss with the milk until the

bread is moistened. Soak for at least 1 hour.

Preheat the oven to 350 degrees. Whisk together the eggs, sugar,

vanilla, and cinnamon and pour over the bread-milk mixture. Fold

together until well mixed.

Fold in the chocolate chunks and mix until evenly distributed. Pour

into a greased, deep 13- by 9-inch pan. Drizzle the melted butter over

the batter and cover with foil.

Bake for 30 minutes covered and then for another 10 to 15 minutes

uncovered, until the pudding is set and firm in the middle and golden

brown on top. Serve warm with Bourbon Butter Sauce.

Bourbon Butter Sauce

Melt the butter in a heavy-bottomed saucepan over medium heat.

Whisk in the sugar and bourbon and bring to a simmer. Crack the eggs

in a large bowl and whisk until blended. Add a little warm bourbon

mixture to the eggs and whisk. Continue to add the bourbon mixture

a little at a time until the eggs have been tempered. Pour all the liquid

back into the pan and return it to medium heat. Bring to a light simmer

and cook for several minutes, until thickened. Keep warm and serve over bread pudding.
