Celebrate the Holidays in Chicago: Great Happenings

Running now through January 7, 2024, Lightscape at the Chicago Botanic Garden (located in Glencoe, Chicago’s North Shore) returns for its fifth season with an illuminated outdoor trail dazzling with brand new installations from around the world and beloved returning favorites such as the Winter Cathedral and a reimagined version of the Fire Garden.New works from international artists include Lilies, from UK artist Jigantics (illuminated 5-foot lilies float elegantly on water, providing a mesmerizing view from the bridge above and igniting a sense of warmth and excitement), Night Lights, from French artist TILT (delicate lamp-shaped lights that extend nearly 19 feet high amplify a cozy atmosphere with a display of soft ambient colors) and Sea of Light, from UK artist Ithaca (thousands of individually controlled balls of LED light make Evening Island sparkle and dance their way to a bespoke soundtrack in multiple patterns and colors). Tickets sell out quickly so it is recommended to book your time and date in advance; advance tickets for adults (non-members) begin at $34 and children (ages 3-12) at $19. 

The Christkindlmarket celebrates its 27th season at Daley Plaza, its fifth year at Gallagher Way in Wrigleyville, and its second time at RiverEdge Park in Aurora.  This year, Christkindlmarket is introducing its first ceramic beer stein with a holiday-themed design ($20), as well as location-specific $8 souvenir mugs with unique designs at each market (for example: the Chicago mug shows off downtown landmarks like the City Hall building and Daley Plaza’s Picasso sculpture while the Wrigleyville mug shows off Hotel Zachary, the intersection sign of Clark & Addison, and much more.) These mugs are hotly anticipated collector’s items for locals who have turned Christkindlmarket into a holiday tradition since 1996. Modeled after the 16th-century holiday markets in Germany, the free-admission outdoor bazaar is a hub for traditional German fare, delightful warm beverages and handcrafted gifts for purchase, and charming holiday vibes the entire family can enjoy. And now in its third year, another popular favorite is back – the annual Christkindlmarkt ornament, hand-painted and glass blown in Europe, portraying a market scene with holiday elements on its ice blue background ($41 at all info booths).

  • Admission to the market is free but food, beverages, and handcrafted gifts all must be purchased. All markets open on November 17; Aurora and Chicago locations close on December 24 and Wrigleyville on December 31. 

Christmas Around the World and Holidays of Light at the Museum of Science and Industry (running through January 7, 2024) is a beloved annual tradition that began in 1942 with a single tree. Today the Museum features a four-story floor-to-dome Grand Tree, surrounded by more than 50 trees and displays decorated by volunteers to represent holiday traditions from cultures around the world.

This year the museum will also be celebrating the wonders of snow, with an exhibition in the Lower Court featuring intricate photographs of snowflakes taken by Caltech physicist Ken Libbrecht.

Illumination: Tree Lights at The Morton Arboretum (Though January 6, 2024) invites visitors to celebrate the holidays and marvel at how light transforms a magnificent landscape. Journey along a 1-mile paved walking path (that is fully ADA compliant for guests with limited mobility), amid festive music and lighting effects, explore exciting new features and immersive installations. Afterwards, warm up by a cracking fire and roast marshmallows for s’mores, or stop in one of the concession tents for a snack and beverage. Ginkgo Restaurant in the Visitor Center will serve dinner guests view the display’s finale on Meadow Lake. The Arboretum Store will also be open for holiday shopping; gifts include a special temperature-activated, color-changing ceramic mug that will be available for purchase during all Illumination dates. Tickets start at $28 per person for nonmembers.

The McCormick Tribune Ice Rink in Millennium Park offers ice skating all winter, through March, weather permitting.  Admission is free, but online reservations are required and skate rentals are available. You’ll be surrounded by the downtown skyline, with magical Christmas lights from the City of Chicago Christmas tree reflected in ‘The Bean’ / Cloud Gate sculpture. OR, head over to Maggie Daley Park, right next to Millennium Park, to the picturesque Skating Ribbon that meanders around snow-dusted pine trees and whimsical play spaces. The path is twice the length of a lap around a traditional skating rink. 

The Immersive Nutcracker: A Winter Miracle (November 24 – December 31, 2023) at Lighthouse Artspace Chicago brings cutting-edge technology to meet the artistry of ballet dancers. This mesmerizing 30-minute immersive experience, set to Tchailkovsky’s music, weaves the classic tale of Marie and her toy nutcracker. Join them, on their magical adventure through the Land of Sweets, brought to life by renowned ballet dancers and innovative projection mapping technology. Pricing begins at $29.99 per person. 

  • While you’re here… Lighthouse ArtSpace Chicago is bringing a new pop-up bar experience, Bar Humbug, to reign in the holiday season. The ArtSpace will be transformed into a winter wonderland with wall-to-wall holiday scenes. A lot like traditional German beer halls, there will be long tables and plush banquettes for groups to gather. Bar Humbug will present live musicians and DJs playing the holiday classics. Guests must be 21 to enter.

ZooLights Presented by ComEd and Invesco QQQ will include new and exciting LED light displays,  photo ops, and interactive programming including a never-before-seen garden-themed light show on the zoo’s South Lawn. Festive photo ops will dot the zoo, as well as costumed characters and Victorian carolers on select nights. Food and beverages including festive cocktails and hot cocoa will be available at Edie Levy’s Landmark Café. Snowy’s Sprits & S’more and various snack stations around the zoo. Check the calendar for special events such as sensory-friendly nights, a family-friendly New Year’s Eve celebration, and adults-only evenings. General admission ZooLights tickets are $7 per person. Tickets on Fridays, Saturdays, Thanksgiving Eve (Nov. 22), and New Year’s Eve (Dec. 31) are $10 per person. As part of the zoo’s ongoing commitment to accessibility, general admission is FREE on Mondays. Ticket sales from ZooLights directly support the zoo’s world-class animal care, global conservation efforts, and innovative learning programs and help keep the zoo free to the public 365 days a year. ZooLights will run through January 7, 2024.

Dinner’s in the Oven: Simple One-Pan Meals

I’m a huge fan of Rukmini Iyer and am revisiting an old favorite Dinner’s in the Oven: Simple One-Pan Meals (Chronicle Books 2018; $19.95), featuring wonderfully easy sheet-pan recipes that always wow people when you bring them to the table. Hah! Little do they know how quick they are to assemble and cook. But we’ll let that be a secret between us.

First of all, the cookbook is beautiful as would be expected as Iyer, who is based in London, is a food stylist and has worked for such businesses as Fortnum & Mason, The Guardian, The Sunday Times, Macmillan Coffee Mornings, The British Heart Foundation, Phaidon, Quadrille Books and Kyle Books, the latter three are three publishing companies known for their cookbooks. Her other cookbooks include Vegetarian Dinners in the Oven: One-Pan Vegetarian and Vegan Recipes, the Roasting Tin series which have sold over 1.75 million copies to date, and the recently released India Express: Fresh and Flavorful Recipes for Everyday.

The great thing about her recipes is that once made they look sophisticated but are extremely easy. But to make it even better, Iyer has composed the book so that it starts off with the easiest recipes first so you learn as you move more forward plus she shows how we can make adaptations and provides charts on how to do so.

“The nicest thing about oven-made meals is that they are versatile and forgiving,” Iyer writes in the introduction to her book, adding that the recipes require the barest minimum in terms of effort—a little light chopping to start, then tasting and adjusting the salt or lemon juice at the end. “Most importantly, they leave you free to do something else while dinner looks after itself—have a bath, help the children with their homework, or, my preferred option, flop on the sofa with a glass of wine.”

Iyer describes the French Tomato and Mustard Tart with Tarragon as one of the easiest and most satisfying dishes in the book in her book.

“The paprika gives it a wonderful smokiness,” she says, “but you could easily use a combination

of honey and mustard as an alternative. It’s that simple.”

Spicy Chipotle Chicken Wings with Sweet Potato Wedges, Cilantro & Lime Yogurt

Serves: 4

Prep: 10 minutes; Cook: 1 hour

  • 1 3/4 pounds chicken wings, separated into wingettes and drumettes
  • 1 3/4 pounds sweet potatoes, peeled and cut into 1-inch [2½cm] wedges
  • 2 teaspoons chile powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon dark brown sugar
  • 3 tablespoons olive oil
  • Sea salt
  • Zest and juice of 1 lime, plus lime wedges, to serve
  • 4 to 5 tablespoons Greek yogurt
  • A handful of fresh cilantro leaves, chopped, plus more to serve

Preheat the oven to 350°F. Place the chicken wings and sweet potato wedges in a large roasting pan or rimmed baking sheet.

Mix together the chile powder, smoked paprika, brown sugar, olive oil, 2 teaspoons sea salt, and half of

the lime zest and juice. Pour the mixture over the chicken and sweet potatoes and mix well with your

hands to coat evenly. Transfer to the oven and roast for 40 minutes.

Turn the heat up to 400°F and roast for a further 20 minutes, to crisp the chicken skin.

Meanwhile, mix together the yogurt, chopped cilantro, remaining lime zest and juice, and a pinch of seasalt. Set aside.

Sprinkle the chicken wings and sweet potatoes with cilantro leaves and serve with lime wedges and the yogurt dip alongside.

Smoky Sausage, Sweet Potatoes and Red Onions

Serves: 4

Prep: 10 minutes

Cook: 50 minutes

  • 8 to 12 good-quality fresh pork sausages (approx. 13/4 pounds [800g] total) links
  • 3 sweet potatoes, peeled and cut into chunky wedges
  • 2 red onions, cut into eighths
  • 6 cloves garlic
  • 4 teaspoons smoked paprika
  • A good splash of olive oil
  • Sea salt and freshly ground black pepper

Preheat oven to 350°F.

In a roasting pan, toss the sausages, sweet potato wedges, red onions, garlic, and smoked paprika with

the olive oil. Season well with sea salt and freshly ground black pepper.

Transfer to the oven and roast for 45 to 50 minutes, until the sweet potatoes are cooked through and

the sausages are sticky and slightly charred. Serve immediately.

French Tomato and Mustard Tart with Tarragon

Serves: 4

Prep: 10 minutes; Cook: 30 minutes

  • One 10-by-15-inch sheet frozen puff pastry, thawed
  • 2½tablespoons Dijon mustard
  • 3/4 pound vine-ripened tomatoes, thinly sliced
  • 4 teaspoons finely chopped fresh tarragon
  • 1 teaspoon sea salt
  • Freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil

Preheat the oven to 425°F. Place the puff pastry on a parchment paper–lined rimmed baking sheet.

Spread the mustard all over, leaving a 3/4-inch border around the edges. Arrange the sliced tomatoes on

the mustard. Sprinkle on the tarragon, sea salt, and freshly ground black pepper and drizzle with the olive oil.

Transfer to the oven and bake for 25 to 30 minutes, until the edges of the tart are golden brown and crisp. Serve immediately.

Fifth generation Lebanese American Hannah Awada, owner of Hummus Goodness, is teaming up with Karen Akouri, founder of drench Dressing in offering three 30-minute presentations of “Deconstructed Fattoush + Hummus Appetizer” on the Meijer Food Stage. Both women are focused on using clean ingredients in their products, free of chemicals, artificial colors and preservatives. Hannah learned the art of hummus making from her mother, and her recipe draws inspiration from that family recipe with olive oil, fresh lemon juice and garlic cloves. Karen was looking for healthy salad dressing and marinade options for her family and began to play around with premium olive and avocado oils, herbs and spices to come up with her award-winning recipes. Common in Spanish, Latin American and Iberian-influenced cultures, empanadas are a baked or fried turnover consisting of filling in a breaded pastry. This tasty handheld appetizer is the focus of a Meijer Food Stage Demonstration by Paola Carlson of Pochis Colombian Restaurant & Caféthe first authentic Colombian restaurant in Grand Rapids and Jorge Gonzalez, director of Start Garden—an organization that provides resources and opportunities to small business owners in Grand Rapids. Born and raised in Colombia, Paola moved to the United States with her husband in 2018 not knowing a word of English. She was soon making customized gift packages and specialty sweets like macarons and decadent chocolate-covered strawberries for her friends as a hobby, and before long she launched Pochis which also imports and sells coffee goods and coffee candy from her homeland offered up from her small café location in downtown Grand Rapids. Pochis will also have a Small Plate booth in The Vineyard featuring a variety of empanadas and arepas (handheld pockets made with ground maize dough stuffed with a filling)—all of which are gluten free.

A Vietnam War refugee from Thailand, Genevieve Vang is an accomplished expert in Thai and Hmong cuisine and even prepared a traditional meal for Hollywood actor and director Clint Eastwood when he was in Detroit filming Gran Torino in 2008. Her award-winning metro Detroit restaurants (Bangkok 96 and Bangkok 96 Street Food) garnered her recognition as a James Beard Award semi-finalist nominee in 2019. In her spare time, Chef Genevieve has developed a gluten free frozen food line called Thai Feast, as well as a new vegan, allergen-free Asian broth and easy to use sauce powders available at southeast Michigan Meijer locations.

On Saturday afternoon, she’ll welcome the passionate anentertaining Jessican Ann Tyson, owner of The Candied Yam-Delightful Southern Cuisine, for a presentation of “Vegan Pad Thai & Pho with Thai Feast” on the Meijer Food Stage.

Jessica Ann is well known in the Grand Rapids community for her ancestorial from scratch soul food cuisine and her perpetual smile, positive attitude and collaborative spirit. The Candied Yam is recognized as one of the Top 50 Restaurants to eat at in Grand Rapids and was recently awarded The Retail Business of the Year.

The Marasigans (Jackie, Ace and Redd) are proud members of the local Filipino community and their Adobo Boy is a celebration of their rich, flavorful and colorful food culture. While we anxiously await their restaurant opening in early 2024, we invite you to stop by The Vineyard to try their Filipino Pork Adobo Bowl – a traditional dish featuring pork stewed in vinegar, garlic, soy sauce, bay leaves and peppercorns.

Beer City Bread Company may be relatively new (2020), but its roots are legendary. Brothers Stefan, Arne and Jimmy Fahlen are descendants of Arne Fahlen—founder of Arnie’s bakery and restaurants. The company craft its various artisan baked goods from local craft beer and natural European sourdough starters that are cultivated daily in their bakery, aged over 24 hours and processed using a “stress-free” handling line before baking. During the Festival, they’ll be serving up hearty handhelds including Italian Herbs and Cheese French Dip, Beer Braised Mojo Pork Sandwich and Beer Infused Pretzel Bites with Beer Cheese, from their Beer City Station booth.

In Jamaican, the phrase Irie means “everything is alright and fine” and that is just the positive vibe that Vince McIntosh, founder of Irie Kitchen, hopes to evoke to his customers. His Jamaican parents immigrated to the United States in the 1980s with a load of family recipes and passion for food that has spread to Vince and his twin sister. Savor their organic Caribbean street food in The Vineyard, where they’re serving up Jerk Wings, Jamaican Patties, Rice & Peas & Curry Garbanzo and Irie Juice.

Father and son due, Jose and Justin del Castillo, have been slinging their Dominican Latin style open pit BBQ for nearly 10 years. Their Shepherd-based hobby turned into something bigger and now Jose & Justin’s Pig Gig takes its food truck to the best Festivals and events around the state. A “pocha” is a Korean term that refers to a type of outdoor food and drink stall—an abbreviation of the phrase “pojangmacha” which translates to “covered wagon”—known for their vibrant atmosphere, friendly ambiance and delicious food. K-Pocha, the brainchild of Lam To, ThienHa Phan and Phong Nguyen (owner and executive chef of Monsoon, a Vietnamese restaurant in downtown Grand Rapids and a Festival participant) specializes in distinctive Koren street-style dishes. An elevated and intimate multi-course dining experience at one of six featured restaurants, for an added cost (advanced reservations required).

Opened in Plainwell on June 1, 2011, Four Roses is making its Festival debut in a big way with a four-course Pairing dinner prepared by owner/chef Tom Rose. Tom spent his entire career working in the culinary field, starting at a small farm-to-table restaurant in the 1980s called Arie’s Café (no longer in operation) as a dishwasher at the age of 15. He moved his way up to executive chef, learning the value of sourcing local and building relationships with farmers. His mentor, Arie’s owner Bob VanRavensway, inspired and encouraged Tom to create stocks, sauces and dishes from scratch. After leaving Arie’s in 1998, Tom spent many years running corporate kitchens for Kellogg and Eaton Corp, and in 2011, he and his wife, Jan, were given the opportunity open their own restaurant: Four Roses. Beginning on Friday, November 17, General Admission tickets are $20 per person, per day with festival hours running from 4-9pm and Saturday, November 18, 2-9pm. Tasting tickets will be available for purchase online and at the event for 50 cents each to be used primarily for beverages tastings. Food samples can be purchased with cash, credit or tasting tickets.

A VIP Preview experience will be offered on Thursday, November 16 from 6-9pm, with just 500 tickets available for purchase for $150 per person. Admission includes specialties from a dozen small plate restaurants, wine, beer and distilled beverage tasting sessions; Meijer Food Stage and Meet the Maker presentations; tasting tickets to sample select new releases, special vintage wines and exclusive beverages served only on Thursday; a VIP Festival sampling glass and live music. For another $75 per person, an intimate multi-course Pairing dinner is added to the ticket.

Deepa’s Secrets: Slow Carb New Indian Cuisine

Avocado, Tomato, and Plum Salad

My mother used to say, “Intelligence is the capacity to adapt to the unexpected.” (She still managed a frown at my bad report cards.) That’s the plum in this dish—I’d never had one until I came to this country. The unexpected ingredient wakes up the palate in this smart little salad.

SERVES 4

Dressing:

  • ½ teaspoon Ginger Garlic Paste
  • ½ yellow onion, minced
  • 1 tablespoon fresh lime juice
  • ½ teaspoon wild honey
  • 1 jalapeno, minced
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon cumin seeds, toasted and ground
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • 1 plum, sliced

Crowning flavor:

  • 2 tablespoons cilantro, stemmed and finely chopped
  • 4 mint leaves, roughly torn
  • 1 teaspoon chaat masala
  • 1 cup toasted crumbled walnuts

Whisk dressing ingredients together in a glass bowl. Check seasoning and set aside.

On a platter, mix tomato, avocado, and plum slices gently. Drizzle the dressing on top.

Crowning flavor: Sprinkle chopped cilantro, mint leaves, and chaat masala on top of the salad. I sometimes sprinkle with Go Nuts! or a handful of toasted crumbled walnuts.

A lassi is the perfect summer refresher. In New Delhi, they were usually savory—yogurt-based with smashed cumin seed, fresh curry leaves, a little salt, served on the rocks. You can get a sweet lassi in India, but this recipe is a closer cousin to the American smoothie.

  • 2 cups Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 teaspoon rose water
  • 1 tablespoon wild honey
  • ¼ teaspoon ground cardamom

Chasing the Sun: Three Places to Go Where Summer Never Ends

For those who aren’t ready to give up warm weather, blue skies, and beaches, Dream Yacht Worldwide is sharing its top destination recommendations for an endless summer by sea – some of which may be less obvious and under-the-radar for American travelers.

1.) Endless Summer in Seychelles –

Sailing in Belize can include a stop at the Blue Hole Natural Monument or a trip to Glover’s Reef, Lighthouse Reef and Turneffe – three atolls offering the chance to swim among 500 species of fish and 100 types of coral, as well as rays and dolphins. Sailing in these open waters during your Belize yacht charter will require a local skipper.

3.) Take it all in in Tahiti –

The South Pacific island of Tahiti and the neighboring islands of French Polynesia may be the closest you will ever come to paradise on earth. Just in Time for Halloween: Going Batty for Bats

Going to Bat for … Bats!

Going batty, bat guano crazy, bats in the belfry–these are a few of the less than enduring terms applied to what may be one of nature’s most misunderstood creatures, often depicted by myths, books, and movies as being ruthless, bloodthirsty and generally not fun or cudddly at all. Well, we have to agree there’s nothing cuddly about bats. Weird looking creatures who like to sleep upside down in caves and trees, but as far as we know they’ve never driven anyone crazy or indulged in any vampire blood drinking throwdowns. Instead consider this: Bats are incredibly important to the ecosystem and by pollinating plants and eliminating pests, they save American farmers billions of dollars a year by preventing crop damage and helping eliminate the cost of pesticides.

So why not pay homage to these winged creatures during International Bat Week that runs from October 24th to, appropriately enough, October 31st better known as Halloween making it a perfect time for a bat road trip. Yes, you read that correctly.

Which brings us to Mammoth Cave National Park near Bowling Green, Kentucky

Yes, the name says it all. The cave is absolutely mammoth … the longest and largest cave system in the entire world and one of the oldest tour attractions in North America with some 426 miles have been explored and at least another 600 miles to go. In other words, as huge as it seems, less than half of the cave is what you see. Rangers are on hand for guided tours through what is one of the oldest tour attractions in North America and are experts at pointing out all the wildlife on the property. That, of course, includes bats. A total of 13 types of bats have been confirmed at this national park, with two other species reported but so far that hasn’t been confirmed.

But don’t look for all the bats in the cave. Sure some are including species that live in the cave while waiting to give birth or during their very long winter naps–a hibernation lasting from mid-October to mid-April. Other species choose to hang out (and we do mean hang) in trees, under bridges, and the eves of buildings around the park.

The federal government had declared that three of Mammoth’s bat species are either “threatened” or “endangered.” Both the Indiana bat and grey bat are considered endangered; the northern long-eared bat is threatened.

Scientists at the national park constantly monitor the health of the bat populations, and the parks hosts occasional public “Bat Nights” at which visitors are invited to watch as bats are captured from the cave, assessed and released.

Because Lost River has a body of water inside the cave, it’s prone to dampness and flooding … which doesn’t work for bats.

Occasionally a young male bat will enter the cave looking for love … but when he doesn’t find a girlfriend, he heads back out.

Marvel Cave in Branson, Missouri

Then head to Marvel Cave, the deepest cave in Missouri (383 feet below the ground at its deepest point) which today is located near the entrance to Silver Dollar City, one of the nation’s most celebrated theme parks. Interestingly, the park evolved from the cave, which was Branson’s first tourist attraction.

The Osage Indians discovered the cave around 1500 and was regularly explored starting in the late 1800s by miners searching for marble and lead. What they found instead was lots and lots of bat guano. You might be thinking that’s a load of crap but consider this. Bat guano at the time was used for both fertilizer and ammunition and for those willing to mine it, the payoff was $700 a ton or more than $20,000 in today’s dollars) per ton. Yes, back in the day, you could get rich off bat poop!

Missouri is nicknamed “The Cave State,” and that means it’s also home to lots of bats. Of the 46 species found in this country, a third – 16 – call Missouri home. Of the 16, four species live in Marvel Cave, including two types of brown bats, plus tricolor bats and endangered gray bats. But, unfortunately, because of disease, pollution, and pesticides, the bat population inside the cave is about a tenth of what it used to be. These days, there are only approximately 40,000 bats at Marvel Cave.

The best time to see them is during the last two tours of the day. During those evening tours, guests stand a good chance of seeing bats in the cave’s Mammoth Room and Cathedral Room.

Silver Dollar City loves its bats and pays homage to them at its annual Harvest Festival where pumpkins are carved to look like bats.

Bat Facts*: Gaining an Appreciation for Fascinating Flying Mammals

🦇Bats are the only mammals capable of true flight. (Take that, “flying” squirrels! You guys glide, not fly.)

🦇There are more than 1,400 bat species around the world, with 46 species found in the United States.

🦇Since bats are mammals, they give birth to live young. A baby bat is called a “pup,” and most mamas give birth to just one per pregnancy.

🦇Bats clean themselves much like cats do. They spend a lot of time grooming … so they always look good for the humans who get those rare glimpses of them!

🦇You’ve heard the term “blind as a bat.” Compared to other animals, bats do have very poor eyesight. But they more than make up for that by having incredible hearing and amazing brains.

🦇Most bats are nocturnal, so they have special adaptations that help them get around and find food in the dark. They can fly fast and track small prey using “echolocation.” This means they emit high-frequency sounds that bounce off objects. They listen for those echoes and then their brains interpret the sounds so they can figure out what the object is. This is what allows them to avoid crashing into things (and each other) while grabbing insects to munch on mid-air.

🦇If you have mosquito problems in your backyard (if you have a pool back there, for example) but are hesitant to use pesticides, consider taking the natural route and using bats to combat the pests. You can make a “bat house” to try to attract them. A bat can eat its body weight in insects in each night … and that can be up to 600 mosquitos!

🦇Climate change is making life incredibly difficult for bats. Heat waves and droughts cause overheating and starvation; wildfires destroy habitats; storms and heavy rainfall impact caves and flood bat roosts; and freezing temperatures block cave entrances or cause bats to freeze to death.

🦇A big risk for bats today is “white-nose syndrome,” a fungal disease that spread rapidly up and down the East Coast and has now moved across the country. The fungus, which appears as a white, fuzzy growth on the nose, doesn’t kill the bat. But the itching from the fungus causes bats to wake up during their hibernation – when there are no insects to eat – and results in the bat slowly starving to death. Though scientists have tried several ways to help bats build an immunity to the fungus, bat populations have plummeted in recent years.

We don’t have a bat recipe to share but Silver Dollar City Succotash is a sure winner and perfect for fall. Here’s the recipe courtesy of Silver Dollar City’s Culinary & Craft School

  • 1 pound lightly breaded okra
  • 8 ounce frozen whole kernel corn (Fresh corn is certainly an option in this recipe)
  • 8 ounce yellow summer squash
  • 8 ounce diced/chunked chicken (pre-cooked)
  • 4 ounce green peppers
  • 4 ounce of onion
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • Butter flavored Vegetable Oil, as needed

Preparation

  • 1 Saute onions and peppers with butter flavored vegetable oil. Remove from the skillet. Saute chicken in the same skillet with oil. Remove after heating thoroughly. Saute corn and squash in the same skillet with oil. Remove.
  • 2 Fry okra in skillet until golden brown. Add salt, pepper, and garlic powder. When okra is done begin adding all the ingredients back into the skillet until reheated to desired temperature.

Also, the Egyptian is bringing movies to its outdoor cocktail bar & pool scene with free Film Fridays the second Friday of each month! Experience the perfect blend of entertainment at Film Fridays; a free movie night hosted at the electrically enchanting outdoor cocktail bar, Egyptian LIVE in downtown Phoenix.

As the sun sets over the city, slip away to an evening of cinematic delight airing next to the hotel’s splash pool, so bathing suits are encouraged! Chilte, the famous local food truck and now brick-and-mortar at the Egyptian, is now serving Chilte To-Go, serving spiced popcorn, chips & guac, a green chili burger, and more for guests to enjoy during the film.
